Coffee lovers in Burien this week will have a new place to gather, as Q.E.D. Coffee will open its newest café inside the historic Three Tree Point Store on Monday morning, Feb. 23.

The shop will officially open its doors at 7 a.m. Monday at 16957 Maplewild Ave SW (map below), following months of renovation work inside the longtime community landmark. For now, the café plans to operate daily from 7 a.m. to 2 p.m., with the possibility of expanding hours after reviewing customer demand.

The Three Tree Point café marks Q.E.D. Coffee’s third location, joining its Mount Baker café and West Seattle shops. The company was founded in 2014 by Matt Greenfield, who began roasting coffee in small batches before opening the company’s first café in Seattle.

“I really see this place as an all day meeting place, a little something for everyone,” Greenfield told The B-Town Blog, adding that he hopes to introduce evening community events such as trivia nights, wine tastings and possibly live music.

Greenfield said Q.E.D. was connected to the opportunity through what he described as serendipity that led him to property owner Todd Manola. Discussions about leasing the space began in September, and by November a lease had been signed.

Inside, the café blends historic elements with new touches. Greenfield said the building itself felt special from the start, and the team initially planned to make only minimal changes. As renovations progressed, they decided to add more Q.E.D. character to the space, including an additional room with window seats, new butcher block counters and a redesigned front bar and cabinetry to improve workflow.

“Little details that we didn’t need to do, but I wanted to do in order to make this place optimal,” Greenfield said.

One of the most interesting details inside the main room is a cool vintage bicycle hanging from the ceiling (pictured above).

“The bike was owned by one of the former residents of the building,” Greenfield told us. “The story I’ve been told was this gentleman was riding this bike around this neighborhood decades ago. I think it was his childhood bike, and it was in the 40’s, but I need to get some more details before I say for sure.”

He hopes to install a plaque about the bike once he gathers more information.

To brew up some excitement ahead of opening day, Q.E.D. Coffee hosted an open house Friday evening, Feb. 20, inviting residents to meet the owners, sample some goodies and get a first look at the new café space.

Greenfield said there are still a few finishing touches to complete, including outdoor benches and additional interior finishes, but he is pleased with the café’s current state as it begins serving customers.

Here’s more about Q.E.D. Coffee from Greenfield:

“QED Coffee has been roasting in Seattle since 2015. Our approach is to create interesting and balanced roasts that highlight the character of each coffee. Three Tree Point will be our third location, and we are honored to carry forward the tradition of the historic Three Tree Point Store. Our cafes put community first, adapting to each unique neighborhood’s needs. We believe in the value of third spaces, and creating an inviting environment to gather. We can’t wait to meet our new neighbors at the Point! Starting Monday we will be open 7 a.m. to 2 p.m. serving coffee and pastries. Once established, we plan to extend hours, add beer/wine, and a small food program.”
