The cost of cereal has become exorbitant, continually escalating. I checked the Safeway ad today and a box of Honey Nut Cheerios is $6.99!
In response, I’ve taken to crafting my own, a preference that surpasses any commercially available options. I vary the ingredients to keep it interesting, but the foundational mix includes:
- 6 cups of rice krispies cereal
- 6 cups of rolled oats
- 2 cups of finely chopped nuts (walnuts, almonds, or your preferred variety)
- 1.5 cups of sugar (options include brown sugar, coconut sugar, demerara sugar, or white sugar)
- 1 tablespoon of cinnamon
Combine the dry ingredients before introducing 1 cup of melted coconut oil, butter, or vegetable oil. A blend of 1/2 cup butter and 1/2 cup coconut oil is also an option.
Thoroughly incorporate the oil and butter into the dry mixture. Transfer the cereal to a large pan or a couple of 9×13 pans and bake at 250 degrees for 2 hours, stirring every 15 minutes.
After baking, consider adding dried fruit for an extra touch. This recipe yields nearly a gallon of cereal, and it pairs exceptionally well with yogurt.
